The Process

Mezcal is not made, it is cultivated through time. From agave plants that mature patiently in the earth, to their slow cooking that awakens natural sugars, each step is guided by tradition and restraint. The fibers are milled, the juices left to ferment naturally, and the spirit is distilled with intention rather than haste. What emerges is an honest expression of place, craft, and fire, a mezcal shaped as much by the land as by the hands that honor it.

The agave hearts are slow-cooked in underground conical stone ovens, layered with volcanic rocks and agave fiber. A ritual of heat and patience that transforms raw piñas into sweetness, awakening their deepest character

Once cooked, the agave fiber is gently crushed by a traditional tahona. Through stone and movement, the juice is released — pure, textured, and ready to continue its transformation.

The extracted must ferments naturally in handcrafted wooden vats. Here, wild yeasts and the surrounding environment shape the spirit, allowing each batch to develop its own voice.

Finally, the mezcal is distilled in copper alembics. A careful process that refines the liquid without erasing its soul, delivering clarity, balance, and depth.
