Espadín Capón
When Time Is Intentionally Extended
Espadín Capón is not a different agave, but a deliberate decision in the field. Before the plant reaches full maturity, the quiote (flowering stalk) is cut—redirecting the agave’s energy back into its core. From that moment, the plant is left to rest and concentrate its sugars over additional months or even years.
This extended maturation results in a spirit with greater depth, softness, and structure compared to a standard Espadín. Where a common Espadín may express freshness and brightness, Capón reveals a more rounded profile subtle sweetness, integrated smoke, and a refined balance shaped by patience and control.
It is not simply harvested, but held back with intention transforming time itself into character.
Commercially, it is more valuable due to its extended maturation time, lower yields, and the additional labor and land required making each Capón a more limited and costly expression.”
